1 cup of butter
1/2 cup of Caster Sugar
1 teaspoon vanilla extract (or seeds from a vanilla bean)
3 and 1/4 cups of flour
1/4 teaspoon salt
Peel of a lemon (optionally)
In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter and the caster sugar, first at low speed then increase speed and mix for about 5 minutes.
Tips: the butter should be room temperature.
After 5 minutes turn off the mixer and add salt, vanilla, lemon peel(optionally) and egg and mix again for 3 minutes.
Add flour and mix until blended. The dough should be soft, slightly sticky.
Preheat oven to 325 degrees.
To form the biscuits you have to use a Cookie Press Spritz,
Bake 9-11 minutes until the edges of the cookies are just barely starting to show color.
Leave the cookies on the pan for three minutes after removing them from the oven.
Tips: Cooking time varies with the type of pan and oven used. Also, cookie presses produce varying sizes of cookies, requiring different cooking times. Watch them carefully.
Cool completely before filling up your cookie jar!
